Flax Seed Oat Bars

Packing lunches for the kids and husband just about every day over here!!! I strive to pack lunches that are both healthy but also boy approved. That means hearty, fulfilling and preferably something chocolate!! They love chocolate chip granola bars but the individually packaged ones at the store create so much waste and don’t even get me started on the preservatives! So as I continue to work (imperfectly) to reduce waste, eat healthy, and buy sustainably, here are my favorite homemade granola bars!!

1 cup coconut oil; 2 tablespoons of honey, 2 tablespoons of water 1-1 1/2 cup organic oats, flax seeds, chia seeds, maca root powder, ground cinnamon and chocolate chips or raisins (optional, but obviously recommended). Mix ingredients together and bake at 350 degrees for 15 minutes. I like making mine in a muffin pan because it makes a nice “to go” shape without trying to cut nice bars in a cake pan! I always make a mess of mine! Cake pan works too! Enjoy!
